Bruschetta Baguette

Ingredients

  • 4 cups sliced tomatoes (with seeds taken out)
  • 1 small shallot or half a red onion, diced
  • 2 cloved garlic, minced
  • 2 tbsp basil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 3 tsp olive oil
  • 2 tsp balsamic vinegar
  • 1 baguette, cut into 1 inch slices

Instructions:

1. Seed and dice, tomatoes. Dice shallot, mince garlic, and cut basil (if using fresh). Gather salt, pepper, olive oil, and balsamic vinegar.
2. Stir to combine and let sit for 15 minutes.
3. Toast your baguette slices in the oven for 10 minutes at 350°F.
4. Add tomato mixture to each piece of baguette.
5. Drizzle with balsamic glaze, if desired, and enjoy!
