Italian Pasta Salad
Ingredients
- 2 tbsp dried basil or 1/2 cup fresh basil
- 3 cloves garlic minced
- 3/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1 1/2 tbsp red wine vinegar
- 2 tsp granulated sugar
- 3/4 tsp salt
- 1/2 tsp crushed red pepper flakes OR Fresh ground black pepper
- 1 Ib farfalle pasta
- 1 pint cherry tomatoes cut in half
- half a red onion diced
- half a brick of mozzarella cheese cut into little cubes
Instructions:
- In a bowl combine basil, garlic, olive oil, lemon juice, vinegar, sugar, salt, and pepper. Mix (or blend if you want it smoother).
- Add Pasta to a large pot of water and bring to a boil. Cook for about 7-8 minutes.
- Prepare all your vegetables and then cut up your mozzarella.
- When the pasta is done cooking, drain the water and quickly rinse it under cold water until cool.
- Place the cooled pasta in a large bowl with your vegetables, dressing, and mozzarella. Toss to combine. Serve and Enjoy!
