Italian Pasta Salad

Ingredients

  • 2 tbsp dried basil or 1/2 cup fresh basil
  • 3 cloves garlic minced
  • 3/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 1/2 tbsp red wine vinegar
  • 2 tsp granulated sugar
  • 3/4 tsp salt
  • 1/2 tsp crushed red pepper flakes OR Fresh ground black pepper
  • 1 Ib farfalle pasta
  • 1 pint cherry tomatoes cut in half
  • half a red onion diced
  • half a brick of mozzarella cheese cut into little cubes

Instructions:

  1. In a bowl combine basil, garlic, olive oil, lemon juice, vinegar, sugar, salt, and pepper. Mix (or blend if you want it smoother).
  2. Add Pasta to a large pot of water and bring to a boil. Cook for about 7-8 minutes.
  3. Prepare all your vegetables and then cut up your mozzarella.
  4. When the pasta is done cooking, drain the water and quickly rinse it under cold water until cool.
  5. Place the cooled pasta in a large bowl with your vegetables, dressing, and mozzarella. Toss to combine. Serve and Enjoy!
