Parmesan Crusted Potatoes
Ingredients
- 2 tbsp olive oil
- 3 garlic cloves, finely grated
- 1/2 tsp ground black pepper
- 1,8 tsp cayenne pepper
- 1 tbsp parsley
- 1 1/2 Ibs yellow potatoes
- 2 oz grated parmesan (nearly 3/4 cup)
Instructions:
1. Preheat the oven to 400°F. Line a rimmes baking sheet with
parchment paper.
2. To a large bowl, add the olive oil, grated garlic, kosher salt, black
pepper, cayenne pepper, ad parsley. Stir to combine.
3. Cut each potato into slices and add them to the oive oil mixture as
you slice. Toss until coated. Add the parmesan to the potatoes and
toss until just coated to prevent the cheese from clumping.
4. Arrange the potatoes on the lined baking sheet in a single layer.
Scrape whatever loose parmesan mixture there is in the bowl onto
your potatoes. Roast the potatoes until fork-tender and parmesan is
a deep golden brown. 25-35 min rotating the pan halfway.
