Roasted Broccoli Recipe
Caesar Roasted Broccoli
Ingredients
- 1 1/2 Ibs broccoli
- 2 tbsp plus 2 tsp olive oil, divided
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp panko breadcrumbs
Dressing Ingredients
- 4 tsp freshly squeezed lemon juice
- 1 cold egg yolk
- 1 tsp dijon mustard
- 1/8 tsp salt
- Freshly ground pepper
- 1/4 cup olive oil
- 1 garlic clove
- 2 tbsp parmesan cheese
Instructions:
1. Preheat oven to 425°F. Place 1.5 lbs chopped broccoli in a large bowl. Drizzle
with 2 tbsp of olive oil, season with 1/2tsp salt and 1/4tsp black pepper. Toss
to combine.
2. Transfer your broccoli onto a baking sheet lined with parchement paper.
Place in the oven and roast until it is golden brown, about 20 min.
3. Heat 2 tsp of olive oil in a small frying pan over medium heat. Add 1/4 cup
of panko breadcrumbs and a pinch of salt. Cook, stirring frequently, until
golden brown, then remove from heat.
4. For the dressing, whisk together your lemon juice, egg yolk, dijon mustard,
salt, and pepper. While whisking pour in your olive oil slowly. Add in
parmesan and garlic and whisk again.
5. When the broccoli is ready, drizzle it with all the dressing and mix it on your
sheet. then top it with your bread crumbs, mix well. Top it with a little
parmesan and serve.
