Strawberry Angel Food Cake Cups

Ingredients

  • 3 quarts of strawberries
  • 2 tsp corn
  • 1 cup heavy whipping cream
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 6 individual mini angel food cakes

Instructions:

1. Cut up 2 quarts of strawberries and toss them into a blender. Blend until smooth.
2. Pour a small amount of the strawberry mixture into a sauce pan and turn stove to medium heat. Add your cornstarch. Whisk until there are no clumps and then add in the rest of your blended strawberries. Heat until the mixture boils and then turn off the stove and allow mixture to cool down.
3. In a mixing bowl add in your heavy whipping cream, powdered sugar, and vanilla extract. Whisk until smooth and it starts to become a light fluffy texture.
4. Place your individual cake cups into 6 bowls and divide your strawberry sauce and whipped cream among them.
